Prepare the Oven and Pan
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

- 4
Combine Wet and Dry Mixtures
Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.
- 5
Bake the Cake
Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- 6
Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
Icing Directions

Prepare the Berry Coulis
In a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook until the berries are soft and the mixture is bubbling. Mash the berries with a fork and simmer for about 5 minutes. Strain through a fine-mesh sieve to remove seeds if desired.
Assemble the Cake
- 9
Frost the Cake
Once the cakes are completely cool, spread a layer of cream cheese icing between the two cake layers and then cover the top and sides with the remaining icing.
- 10
Serve with Coulis
