    Prepare the Cauliflower

    Preheat your oven to 375°F (190°C). Cut the cauliflower into florets and steam or boil until just tender, about 5-7 minutes. Drain well and set aside.

    In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes, stirring constantly. Gradually whisk in the milk, then bring to a simmer. Cook until thickened, about 5 minutes. Add nutmeg, salt, and black pepper to taste.

    Remove the sauce from heat and stir in the grated Gruyere, Raclette, and mozzarella until melted and smooth.

    In a large baking dish, layer the steamed cauliflower florets. Pour the cheese sauce over the cauliflower, ensuring it is evenly coated.

    In a separate bowl, mix the diced baguette with the panogratto. Sprinkle this mixture evenly over the cheese sauce in the baking dish.
