    Prepare the Fries

    Peel and cut the potatoes into even-sized fries. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

    Make the Coleslaw

    In a large bowl, combine shredded cabbage and carrots. In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Chill in the refrigerator until serving.

    Prepare the Tartar Sauce

    In a small bowl, mix together mayonnaise, dill pickles, capers, lemon juice, Dijon mustard, and salt. Adjust seasoning to taste and refrigerate until ready to use.

Cooking

    Fry the Halibut

    In a bowl, whisk together flour, baking powder, salt, and pepper. Gradually add beer until smooth. Dredge halibut fillets in the batter, allowing excess to drip off. Carefully place fillets in hot oil and fry for 4-5 minutes on each side, or until golden and cooked through. Remove and drain on paper towels.
