Fried Chicken Preparation

    Marinate the Chicken

    In a large bowl, mix buttermilk and hot sauce. Add chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Coating

    In another bowl, combine flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

    Coat the Chicken

    Remove chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Shake off excess flour.

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C). You can test the temperature by dropping a small amount of flour in the oil; it should sizzle.

    Fry the Chicken

    Carefully add coated chicken pieces to the hot oil, working in batches if necessary. Fry for 15-18 minutes, turning occasionally, until golden brown and cooked through.

    Remove chicken from oil and place on a wire rack or paper towels to drain excess oil. Serve hot with your favorite sides.
