Prepare the Pork
In a bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this spice mixture all over the pork shoulder.

Cook the Pork
Place the pork shoulder in a slow cooker or smoker. Add apple cider vinegar, cover, and cook on low for 8-10 hours until the meat is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the cooker and shred it using two forks. Mix in barbecue sauce to taste.

Prepare the Slaw
In a large bowl, combine the shredded cabbage and grated carrots.

Make the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour over the cabbage and carrots.

Toss everything together until well combined. Refrigerate for at least 30 minutes before serving.
