Method
Prepare the Brisket
Season the Brisket
Rub the brisket with salt, black pepper, garlic powder, onion powder, and smoked paprika. Ensure it's evenly coated.
Sear the Brisket
In a large skillet, heat olive oil over medium-high heat. Sear the brisket on all sides until browned, about 5 minutes per side.
Cook the Brisket
Transfer the brisket to a slow cooker. Pour the beef broth over the brisket and cook on low for 8-10 hours or until tender.
Prepare Pickled Red Onions
Make the Pickling Liquid
In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil and stir until sugar dissolves.
Pickle the Onions
Pour the hot pickling liquid over the sliced onions. Let it sit for at least 30 minutes before using.
Assemble the Sandwich
Shred the Brisket
Once the brisket is cooked, remove it from the slow cooker and shred it with two forks.
Build the Sandwich
Spread mayonnaise on the sandwich rolls. Add a generous amount of shredded brisket and top with pickled red onions and fresh cilantro.
