Season the Prime Rib
Take the prime rib roast and pat it dry with paper towels. In a small bowl, mix together the kosher salt, black pepper, garlic powder, and fresh rosemary. Rub the mixture all over the roast, ensuring it's well coated. Drizzle olive oil over the meat and rub it in as well.
Cooking
Roasting the Prime Rib
Preheat your oven to 450°F (232°C). Place the seasoned prime rib in a roasting pan bone side down. Roast for 20 minutes, then reduce the oven temperature to 325°F (163°C) and continue to cook until the internal temperature reaches your desired doneness (about 130°F for medium-rare). This will take approximately 1.5 to 2 hours, depending on the size of the roast.
Resting
Once the roast reaches the desired temperature, remove it from the oven and cover it loosely with aluminum foil. Let it rest for 20-30 minutes before slicing. This allows the juices to redistribute throughout the meat.
