Dough Preparation
Activate Yeast
In a small bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until it becomes frothy.
Mix Dry Ingredients
In a large mixing bowl, whisk together flour and salt.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-10 minutes until smooth.
Let the Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Assembly and Baking
Prepare Filling
Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thick.
Cut and Fill
Cut the dough into squares (about 3x3 inches), place a tablespoon of filling in the center of each square, and fold the corners up to pinch the filling inside.
Second Rise
Place the kolaches on a baking sheet lined with parchment paper, cover, and let them rise for another 30 minutes.
Bake
Preheat the oven to 375°F (190°C) and bake the kolaches for 15-20 minutes or until golden brown.
