Prepare the Rice

Cook Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Prepare the Bahn Mi Pickles

Make Pickles

In a bowl, combine the rice vinegar, sugar, and salt. Add the julienned carrot, cucumber, and sliced radishes. Mix well and let it sit for at least 30 minutes.

Assemble the Bowl

Combine Ahi Tuna

In a bowl, mix the diced Ahi tuna with soy sauce, sesame oil, and chopped scallions. Let it marinate for 10 minutes.

Build the Poke Bowl

In a serving bowl, place a scoop of sushi rice as the base. Top with the marinated Ahi tuna, sliced avocado, Bahn Mi pickles, tempura crispies, and drizzle with spicy mayo.
