Preparing the Fries

Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin fries or wedges.

Soaking the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Drying the Fries
Drain the fries and pat them dry with paper towels to remove excess moisture.

Seasoning the Fries
Remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle garlic powder, salt, and grated Parmesan cheese over the fries. Toss gently to coat.

Garnish with chopped fresh parsley before serving.
Making the Fry Sauce

Mixing the Ingredients
In a bowl, combine mayonnaise, ketchup, garlic powder, paprika, and salt. Stir until well mixed.

Refrigerate the fry sauce for at least 15 minutes before serving to let the flavors meld.
