Preparation

    Marinate the Shrimp

    In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the shrimp and mix well. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Greek Rice

    In a saucepan, heat olive oil over medium heat. Add the rice and stir for 2 minutes. Add chicken broth, lemon zest, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until rice is tender.

    Make the Greek Salad

    In a large bowl, combine diced cucumber, tomato, red onion, feta cheese, and olives. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Pour over the salad and toss gently.

    Prepare the Tzatziki Sauce

    In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Adjust seasoning to taste and refrigerate until ready to serve.

    Grill the Tomatoes

    Preheat the grill to medium-high heat. Brush the halved tomatoes with olive oil and season with salt and pepper. Grill for about 3-4 minutes on each side until slightly charred.

Cooking

    Cook the Shrimp

    Preheat the grill. Thread the marinated shrimp onto skewers and grill for about 2-3 minutes on each side until shrimp are opaque and cooked through.
