    Marinating the Meat

    In a bowl, combine olive oil, minced garlic, salt, black pepper, cumin, and paprika. Cut chicken and lamb into 1-inch cubes and add to the marinade. Let it sit for at least 30 minutes.

    Preparing the Skewers

    Soak wooden skewers in water for 30 minutes. Thread the marinated chicken and lamb onto the skewers, alternating with bell pepper and red onion pieces.

    Cooking the Kabobs

    Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally until the meat is cooked through and has grill marks.

    Making the Saffron Rice

    In a saucepan, rinse the basmati rice under cold water. Add rice, water, and a pinch of saffron to the pot. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit covered for 5 minutes.

    Grilling the Tomato

    While the kabobs are cooking, place the whole tomatoes on the grill for about 5 minutes, turning occasionally until slightly charred.

    Preparing the Salad

    In a bowl, mix the mixed greens with chopped cilantro and lemon juice. Toss well to combine.

    Serve the kabobs with saffron rice, grilled tomatoes, and house salad on the side.
