    Marinate the Beef

    In a bowl, combine olive oil, soy sauce, minced garlic, cumin, paprika, salt, and black pepper. Cut the beef sirloin into 1-inch cubes and add to the marinade. Allow to marinate for at least 1 hour, preferably overnight.

    Prepare the Vegetables

    Cut the bell peppers and red onion into 1-inch pieces. Set aside. Prepare cherry tomatoes for grilling.

    Prepare the Rice

    In a pot, bring water to a boil. Add basmati rice and saffron threads. Reduce heat, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed. Fluff with a fork.

    Prepare the Salad

    In a bowl, toss mixed salad greens with chopped cilantro and lemon juice. Season with salt and pepper to taste.

    Assemble the Kabobs

    Thread marinated beef, bell peppers, red onion, and cherry tomatoes onto skewers, alternating ingredients. Preheat the grill to medium-high heat.

    Grill the Kabobs

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness.

    Grill the Tomatoes

    Place the grilled tomatoes on the grill for the last 5 minutes of cooking, until slightly charred.

    Serve

    Serve the shish kabobs with saffron basmati rice, house salad, and grilled tomatoes on the side.
