    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut the russet potatoes into thin strips and soak them in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    In a large bowl, toss the dried potato strips with olive oil, salt, black pepper, garlic powder, and dried oregano until evenly coated.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Prepare the Tzatziki Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and chopped dill. Mix well and refrigerate until ready to serve.

    Once the fries are crispy, remove them from the oven and top with crumbled feta cheese and sliced gyro meat. Drizzle with homemade tzatziki sauce before serving.
