    Prepare the Falafel Mixture

    In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Process until the mixture is well combined but still slightly chunky. If it’s too wet, add a little flour to bind it together.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

    Fry the Falafel

    Heat oil in a deep frying pan over medium heat. Once hot, carefully add the falafel balls and fry them until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.

    Prepare the Tzatziki Sauce

    In a bowl, combine shredded cucumber, yogurt, minced garlic, lemon juice, and a pinch of salt. Mix well and refrigerate until ready to use.

    Assemble the Sandwich

    Warm the pita bread in a dry skillet or microwave. Spread tzatziki sauce inside each pita, add lettuce, sliced tomato, cucumber, and a few falafel balls. Drizzle additional tzatziki on top if desired.
