Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato sticks in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add the potato sticks to the hot oil in batches. Fry for 5-7 minutes or until they are golden brown and crispy.

Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with sea salt and toss gently.

Serve immediately, garnished with fresh parsley if desired.
