1. Prepare the Pasta

Bring a large pot of salted water to a boil. Add the mafaldine pasta and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.

2. Sauté the Mushrooms

In a large skillet, heat the olive oil over medium-high heat. Add the oyster mushrooms and sauté until golden and crispy, about 5-7 minutes. Season with salt and black pepper. Remove from the skillet and set aside.

3. Make the Truffle Cream Sauce

In the same skillet, reduce the heat to medium and add the heavy cream. Bring to a gentle simmer and stir in the grated Parmesan cheese. Allow the sauce to thicken slightly, about 3-4 minutes.

4. Combine Ingredients

Add the cooked mafaldine pasta to the skillet with the truffle cream sauce. Toss to coat the pasta evenly, adding reserved pasta water as needed to reach desired consistency.

5. Finish the Dish

Stir in the crispy oyster mushrooms and thinly sliced prosciutto. Finish with shaved black truffle on top. Adjust seasoning with salt and black pepper to taste.

6. Serve

Plate the truffle mafaldine and garnish with additional shaved black truffle and Parmesan cheese if desired.
