Preparation
1. Prepare the Pickled Onions
In a bowl, combine apple cider vinegar, water, sugar, and salt. Stir until sugar and salt dissolve. Add sliced red onion and let it sit for at least 30 minutes.
2. Cook the Candied Bacon
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. In a bowl, mix brown sugar and black pepper. Coat bacon strips in the mixture and place them on the baking sheet. Bake for 15-20 minutes until crispy and caramelized. Let cool and chop into pieces.
3. Prepare the Deviled Eggs
Hard boil the eggs by placing them in a pot of cold water, bringing to a boil, and then simmering for 10 minutes. Allow to cool in ice water, then peel and slice in half. Remove yolks and mash with mayonnaise, Dijon mustard, salt, black pepper, and paprika. Fill egg whites with yolk mixture.
4. Assemble the Cosmic Devils
Top each deviled egg with a piece of candied bacon and a few slices of pickled onions. Serve immediately.
