Prepare the Chicken Cutlets
Pound the chicken breasts to an even thickness. Season with salt and black pepper.

Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Fry the breaded chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Chicken Parmigiana
Preheat the oven to 400°F (200°C). Place the fried chicken cutlets in a baking dish. Spoon house red sauce over each cutlet, then top with mozzarella and Parmesan cheese.

Bake
Bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and golden.

Cook the Pasta
While the chicken is baking, cook the mafaldine pasta according to package instructions. Drain and toss with a bit of olive oil, salt, and fresh basil.

Serve
Serve the chicken parmigiana hot over a bed of mafaldine pasta, garnished with extra basil if desired.
