    Prepare the Chicken Cutlets

    Pound the chicken breasts to an even thickness. Season with salt and black pepper.

    Breading the Chicken

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and the third with breadcrumbs. Dredge each chicken cutlet first in flour, then dip in the egg, and finally coat with breadcrumbs.

    Fry the Chicken

    In a large skillet, heat the olive oil over medium heat. Fry the breaded chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Chicken Parmigiana

    Preheat the oven to 400°F (200°C). Place the fried chicken cutlets in a baking dish. Spoon house red sauce over each cutlet, then top with mozzarella and Parmesan cheese.
