Prepare the Goat Cheese
Slice the goat cheese into rounds about 1/2 inch thick. Freeze the rounds for about 30 minutes to help them hold their shape while frying.

Bread the Cheese
Coat each frozen goat cheese round in flour, then dip into the egg, and finally coat with bread crumbs. Repeat until all rounds are breaded.

Fry the Goat Cheese
In a large skillet, heat olive oil over medium heat. Fry the breaded goat cheese rounds for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Assemble the Salad
In a large bowl, combine mixed greens, sliced red onion, candied pecans, and halved medley tomatoes. Toss gently.
