Duck Fat Fries

Prepare the Potatoes
Peel the russet potatoes and cut them into even fries, about 1/4 inch thick. Rinse the fries in cold water to remove excess starch, then pat them dry with paper towels.

Heat the Duck Fat
In a large, heavy-bottomed pot or deep fryer, heat the duck fat over medium heat until it reaches 325°F (160°C). You can use a thermometer to check the temperature.

Fry the Potatoes
Carefully add the fries to the hot duck fat in batches, ensuring not to overcrowd the pot. Fry for about 6-8 minutes, or until they are golden and crispy. Remove them with a slotted spoon and drain on paper towels.

Season and Serve
While the fries are still hot, season them with salt and black pepper to taste. Serve immediately with Cosmic Sauce on the side.
