    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Slice the tomatoes in half, drizzle with olive oil, and season with salt and pepper. Place them cut-side up on a baking sheet and roast for 25-30 minutes until they are caramelized and tender.

    Prepare the Grinder

    While the tomatoes are roasting, slice the submarine rolls open lengthwise. Spread the basil pesto on both sides of the rolls.

    Assemble the Grinder

    Layer the fresh mozzarella slices on the bottom half of each roll, followed by the roasted tomatoes and fresh spinach. Drizzle balsamic glaze over the top, then close the grinder.

    Toast the Grinder

    Heat a woodfired grill or a panini press. Place the assembled grinder on the grill and toast for about 5-7 minutes until the bread is crispy and the cheese is melted.
