Roast the Cauliflower
Preheat your oven to 400°F (200°C). Toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and black pepper in a large bowl. Spread the seasoned cauliflower on a baking sheet and roast for 25-30 minutes, or until golden and tender.

Prepare the Dip
Once the cauliflower is roasted, remove it from the oven and let it cool slightly. In a large mixing bowl, combine the roasted cauliflower, cream cheese, buffalo sauce, and half of the shredded cheddar cheese. Mix until well combined and the cauliflower is broken down into smaller pieces.

Bake the Dip
Transfer the mixture to a baking dish and sprinkle the remaining cheddar cheese on top. Bake in the oven for another 15-20 minutes or until the cheese is bubbly and golden.

Prepare the Crostini
While the dip is baking, slice the croissant or baguette into thin pieces. Arrange them on a baking sheet and lightly brush with olive oil. Toast in the oven for about 5-10 minutes until golden brown.

Once the dip is done baking, serve it hot alongside the toasted crostini.
