Taquitos Preparation

Prepare the Filling
In a mixing bowl, combine the braised brisket, shredded cheese, diced green chiles, salt, and black pepper. Mix well and set aside.

Prepare the Tortillas
Heat a skillet over medium heat. Lightly warm the corn tortillas one by one for about 30 seconds on each side until they are pliable.

Assemble the Taquitos
Place about 2 tablespoons of the brisket filling on one side of each tortilla. Roll the tortilla tightly around the filling and secure with a toothpick if necessary.

Fry the Taquitos
In a frying pan, heat vegetable oil over medium-high heat. Fry the taquitos in batches until they are golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.

Prepare the Ingredients
Remove the husks from the tomatillos and rinse them under warm water. Cut the tomatillos into quarters and place them in a blender.
