Prepare Churro Dough

Step 1: Boil the Mixture
In a medium saucepan, combine the water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat, stirring occasionally until the butter has melted.

Once boiling, remove the saucepan from heat and stir in the all-purpose flour and pumpkin pie spice until the mixture forms a ball.

Allow the dough to cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough becomes smooth.
Prepare Pumpkin Spice Sugar

Step 4: Mix Sugar and Spice
In a small bowl, combine the granulated sugar and pumpkin pie spice. Set aside.
Make Cream Cheese Icing

Step 5: Beat Cream Cheese
In a medium bowl, beat the cream cheese and unsalted butter together until smooth and creamy.

Stir in the vanilla extract, then gradually add the powdered sugar, mixing until well combined.

If the icing is too thick, add the milk a little at a time until you reach your desired consistency.
Fry Churros

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Transfer the churro dough to a piping bag fitted with a star tip. Pipe 4-6 inch long strips of dough into the hot oil.

Fry the churros for about 2-3 minutes on each side, or until they are golden brown and cooked through.
