Preparation

Prepare the Proteins
In a skillet over medium heat, cook your choice of protein (ground beef, ground turkey, shredded chicken, or tofu) until fully cooked. If using ground meats, break them apart with a spatula and cook until no longer pink.

Prepare Black Beans
In a small saucepan, heat the drained and rinsed black beans over medium heat until warmed through, about 5 minutes. Stir occasionally.

Prepare Pico de Gallo
If not using pre-made pico de gallo, combine diced tomatoes, onions, cilantro, lime juice, salt, and jalapeños in a bowl. Mix well and set aside.

Layer the Nachos
On a large oven-safe platter, spread half of the tortilla chips evenly across the bottom.

Add Toppings
Layer half of the cooked protein, black beans, pico de gallo, and green chile queso over the tortilla chips. Then repeat with another layer of tortilla chips, remaining protein, beans, pico de gallo, and queso.

Melt Cheeses
Place the assembled nachos in a preheated oven at 350°F (175°C) for 10-15 minutes, or until the cheese is melted and bubbly.

Add Fresh Toppings
Once out of the oven, add sliced red Fresno peppers, dollops of sour cream, and generous scoops of guacamole on top.

Serve Immediately
Serve the loaded nachos hot, garnished with any additional toppings of your choice, and enjoy!
