Heat the Oil
In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the sliced potatoes to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes.

Drain and Season
Remove the chips with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.
Guacamole

Mix in Ingredients
Add lime juice, finely chopped red onion, diced tomato, cilantro, and salt to the mashed avocado. Mix well.

Taste and Adjust
Taste the guacamole and adjust seasoning with more lime juice or salt, if necessary.
Chile Queso

Melt the Cheeses
In a medium saucepan over medium heat, combine cheddar cheese, cream cheese, and milk. Stir until melted and smooth.

Add Chilies
Stir in the diced green chilies and salt. Mix well until heated through.

Serve Warm
Remove from heat and serve warm with the house-made chips.
