Prepare the Fish
Pat the fish fillets dry with paper towels. Cut them into smaller pieces if preferred.

Make the Batter
In a shallow bowl, mix together the flour, cornmeal, salt, black pepper, and paprika. In another bowl, whisk together the egg and milk.

Fry the Fish
In a deep skillet, heat the oil over medium heat. Once hot, carefully add the coated fish pieces and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, combine the mayonnaise, minced chipotle peppers, and lime juice. Mix well until smooth.
Taco Assembly

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos
On each tortilla, place a piece of crispy fish, a generous handful of shredded cabbage, a sprinkle of chopped cilantro, and a drizzle of chipotle mayo. Serve with lime wedges on the side.
