Method

Brisket Preparation

    Sear the Brisket

    In a large skillet or Dutch oven, heat a bit of oil over medium-high heat. Season the brisket with salt and black pepper. Sear the brisket on all sides until browned, about 4-5 minutes per side.

    Add Aromatics

    Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent.

    Add Broth and Spices

    Add the beef broth, cumin, paprika, and chipotle peppers. Bring to a simmer.

    Braise the Brisket

    Cover the pot and reduce the heat to low. Let the brisket braise for 3-4 hours, or until it is tender and easily shredded with a fork.

    Shred the Brisket

    Remove the brisket from the pot and let it rest for a few minutes. Shred the meat with two forks and return it to the pot, mixing it with the juices.

Chipotle Ranch Preparation

    In a bowl, combine ranch dressing, chipotle peppers, lime juice, garlic powder, and salt. Mix well and adjust seasoning as needed.

Pickled Red Onion Preparation

    In a saucepan, combine apple cider vinegar, sugar, salt, and water. Bring to a simmer, stirring until the sugar dissolves.

    Place the sliced red onion in a jar and pour the hot pickling solution over the onions. Let it cool to room temperature, then refrigerate for at least 1 hour before using.

Guacamole Preparation

    In a bowl, scoop out the flesh of the avocados and mash with a fork.

    Add lime juice, minced garlic, salt, chopped cilantro, and diced tomato. Stir until well combined.

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Top each tortilla with shredded brisket, a drizzle of chipotle ranch, pickled red onions, and a spoonful of guacamole. Garnish with fresh cilantro.
