Fish Preparation

    Marinate the Fish

    In a bowl, mix together olive oil, cumin, paprika, salt, and black pepper. Add the fish fillets and coat them evenly with the marinade. Let it sit for at least 15 minutes.

    Heat a skillet over medium-high heat. Once hot, add the marinated fish fillets and cook for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from heat and set aside.

Pico de Gallo Preparation

    In a mixing bowl, combine diced tomatoes, red onion, cilantro, jalapeño, lime juice, and salt. Toss well and set aside to let the flavors meld.

Baja Sauce Preparation

    In a small bowl, whisk together mayonnaise, sour cream, lime juice, hot sauce, and garlic powder until smooth. Adjust seasoning to taste and set aside.

Guacamole Preparation

    In a bowl, mash the ripe avocados. Add lime juice, salt, garlic powder, and cilantro. Mix until well combined and creamy.

Assembling Tacos

    Warm the corn tortillas in a dry skillet until pliable. Place a portion of cooked fish on each tortilla. Top with shredded romaine, pico de gallo, a drizzle of Baja sauce, and a scoop of guacamole. Serve immediately.
