Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed and rice is tender.

Combine Ingredients
In a medium bowl, combine the black beans, corn, red onion, red bell pepper, and chopped cilantro.

Add Seasoning
Add lime juice, salt, and black pepper, then mix until well combined.

Let the salsa sit for at least 10 minutes to allow the flavors to meld.
Lime Crema

Mix the Crema
In a small bowl, whisk together sour cream, lime juice, garlic powder, and salt until smooth.
