Cook the Bacon
In a large skillet over medium heat, cook the jalapeno bacon until crispy, about 5-7 minutes. Flip halfway through to ensure even cooking. Once done, remove from skillet and place on paper towels to drain excess grease.

Warm the Taco Shells
In the same skillet used for the bacon, warm the soft taco shells on low heat for about 30 seconds on each side until they are soft and pliable.

Assemble Tacos
On each warmed taco shell, layer the shredded romaine lettuce, followed by the crispy jalapeno bacon slices, a generous scoop of pico de gallo, cubed avocado, and a sprinkle of cotija cheese.

Add Ranch Dressing
Drizzle ranch dressing over the top of each taco according to preference.
