Method

Chicken Marinade Preparation

  1. 1

    Make the Marinade

In a bowl, combine soy sauce, white vinegar, minced garlic, brown sugar, black pepper, smoked paprika, cumin, and olive oil. Mix well to create a marinade.

  2. 2

    Marinate the Chicken

Add the chicken thighs to the marinade, ensuring they are completely coated. Cover with plastic wrap and refrigerate for at least 2 hours or overnight for best flavor.

Pickling the Peppers

  1. 3

    Prepare the Pickling Liquid

In a pot, combine sliced red Fresno peppers, white vinegar, water, sugar, and salt. Bring to a boil, then reduce the heat to low and let simmer for about 10 minutes.

  2. 4

    Pickle the Peppers

Remove from heat and let the mixture cool. Transfer to a jar and refrigerate for at least 1 hour before using.

Cabbage Slaw Preparation

  1. 5

    Mix the Slaw

In a large bowl, combine shredded cabbage, shredded carrot, chopped cilantro, lime juice, olive oil, salt, and black pepper. Toss until well combined.

  2. 6

    Rest the Slaw

Let the slaw sit for at least 15 minutes to allow the flavors to meld.

Lime Crema Preparation

  1. 7

    Make the Lime Crema

In a small bowl, whisk together sour cream, lime juice, lime zest, and salt until smooth and creamy.

Cooking the Chicken

  1. 8

    Prepare to Cook the Chicken

Preheat the grill or a skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off.

  2. 9

    Cook the Chicken

Grill or cook the chicken for about 6-8 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).

  3. 10

    Slice the Chicken

Once cooked, let the chicken rest for 5 minutes before slicing it into strips.

Taco Assembly

  1. 11

    Warm the Tortillas

Warm the corn tortillas in a skillet for a few seconds on each side until soft.

  2. 12

    Assemble the Tacos

Assemble the tacos by placing sliced chicken on a tortilla, topped with cabbage slaw, pickled red Fresno peppers, and a drizzle of lime crema.

  3. 13

    Serve
