    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean, poke several holes in them with a fork, and rub them with a little olive oil and salt. Bake the potatoes directly on the oven rack for about 45-60 minutes or until tender.

    Cook the Ribeye Steak

    Season the ribeye steak with salt and pepper. Heat a skillet over medium-high heat and add a tablespoon of butter. Once hot, add the steak and sear for about 4-5 minutes per side for medium-rare, or until your desired doneness. Remove from heat and let it rest for at least 5 minutes before slicing.

    Make the Creamy Seafood Filling

    In a saucepan, melt the remaining butter over medium heat. Add the heavy cream and bring to a simmer. Stir in the cooked shrimp and cheddar cheese until melted and creamy. Season with salt and pepper to taste.

    Once the potatoes are cooked, carefully slice them open and fluff the insides with a fork. Pour the creamy seafood mixture into each potato. Top with sliced ribeye and garnish with chopped green onions.
