Prepare the Fish
Pat the fish fillets dry with paper towels. Season both sides with blackening seasoning.

Cook the Fish
In a large skillet, heat olive oil over medium-high heat. Add the seasoned fish fillets and cook for about 3-4 minutes on each side until blackened and cooked through. Remove from skillet and set aside.

Assemble the Dish
On a plate, layer the shredded cabbage, followed by the cooked fish fillets. Top with pico de gallo, a generous dollop of chipotle mayo, and sprinkle with shredded Chihuahua cheese.

Serve the pescado hot with lime wedges on the side for squeezing over the top.
