2 tamales made from scratch with either chicken and green salsa or pork with red salsa and a side of seasoned potatoes and refried pinto beans.

Tamales Preparation

    Prepare the Masa

    In a large mixing bowl, combine masa harina, baking powder, and salt. Gradually add chicken broth (or pork broth) until the dough is smooth and pliable.

    Fill the Tamales

    Take a soaked corn husk and spread about 2 tablespoons of masa dough on it. Add a spoonful of shredded chicken or pork in the center, then fold the sides inward and roll it up tightly. Repeat with remaining husks and filling.

    Steam the Tamales

    Place tamales upright in a steamer pot, cover, and steam for about 1 to 1.5 hours, or until the masa pulls away from the husk easily.

Salsa Preparation

    Make the Green Salsa

    Boil tomatillos and jalapeño until soft. Blend with cilantro, lime juice, and salt to taste until smooth.

    Make the Red Salsa

    Roast tomatoes, garlic, and onion until charred. Blend with cilantro, lime juice, and salt to taste until smooth.

Sides Preparation

    Prepare the Potatoes

    In a skillet, heat olive oil over medium heat. Add cubed potatoes, seasoning, and salt. Cook until golden and tender, about 15-20 minutes.

    Heat the Refried Beans

    Heat the refried pinto beans in a saucepan over medium heat until warmed through.
