Prepare the Beef Cheeks
Season the beef cheeks with salt and black pepper. In a large pot, sear the beef cheeks over medium-high heat until browned on all sides, about 8-10 minutes.

Slow Cook
Add sliced onion and enough water to cover the beef cheeks. Bring to a boil, then reduce the heat to low, cover, and simmer for 2.5 to 3 hours until the beef is tender.

Make the Salsa
While the beef is cooking, prepare the salsa. Blend together tomatoes, green chili peppers, red chili peppers, garlic, and lime juice until smooth. Adjust seasoning to taste.

Chop the Cilantro
Finely chop the cilantro and set aside.

Serve
Once the beef cheeks are tender, shred the meat and serve with chopped cilantro and a side of spicy salsa.
