Marinate the Pork
Remove the stems and seeds from the guajillo chiles. In a pot, soak the chiles in hot water for about 15 minutes until softened. Blend the softened chiles with garlic, cumin, oregano, apple cider vinegar, pineapple juice, salt, and black pepper until smooth. Pour the marinade over the pork shoulder in a large bowl, ensuring it's well coated. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

Cook the Pork
Preheat your grill or oven to medium-high heat. Remove the pork from the marinade and let it sit for a few minutes to come to room temperature. Grill or roast the pork shoulder for about 25-30 minutes per pound, or until the internal temperature reaches 145°F (63°C). Baste with leftover marinade during cooking for added flavor.

Serve
Once the pork is cooked, let it rest for 10 minutes before slicing. Serve warm, topped with the pineapple-onion-cilantro mixture and a squeeze of fresh lime juice.
