Preparing the Potatoes

    Cook the Potatoes

    Preheat the oven to 400°F (200°C). Dice the potatoes into small cubes. In a bowl, toss the potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread them out on a baking sheet and roast for 25-30 minutes or until golden and crispy.

Making the Refried Beans

    Sauté the Onions

    In a skillet over medium heat, heat olive oil and sauté the chopped onions until translucent. Add the canned pinto beans (drained and rinsed) and cumin. Cook for about 5-7 minutes, mashing the beans as they heat. Season with salt to taste.

Preparing the Tacos

    Fry the Tortillas

    In a separate skillet, heat a small amount of oil over medium-high heat. Fry each corn tortilla for about 1-2 minutes on each side until crispy. Remove and drain on paper towels.

    Cook the Eggs

    In the same skillet, crack the eggs and cook them over easy, about 2-3 minutes per side.

    Assemble the Tacos

    Place a fried tortilla on a plate, top with a cooked egg, salsa, and queso fresco. Repeat for the second taco.
