Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros
Transfer the churro dough to a piping bag fitted with a star tip. Pipe 4-inch long strips into the hot oil, cutting them with scissors. Fry until golden brown, about 2-3 minutes per side.

Make the Chocolate Sauce
In a small saucepan, melt the Mexican chocolate over low heat. Stir in Baileys Irish Cream until smooth. Remove from heat.

Serve
Remove churros from the oil and drain on paper towels. Roll in cinnamon sugar (mix granulated sugar and cinnamon). Serve warm with melted Baileys chocolate sauce.
