Prepare Soba Noodles
Bring 1 liter of water to a boil. Add the soba noodles and cook according to package instructions (usually about 5-7 minutes). Once cooked, drain and rinse the noodles under cold water to stop the cooking process. Set aside.

Prepare Tempura Batter
In a mixing bowl, combine the tempura batter mix with ice water until just mixed. Do not over-mix; some lumps are fine.

Prepare Vegetables
Slice the vegetables into thin strips suitable for tempura. Ensure they are dry before dipping in the batter.

Heat Oil for Frying
In a deep frying pan or wok, heat vegetable oil to 180°C (350°F). You can test the oil by dropping a small amount of batter into the oil; it should sizzle and float.

Fry Tempura
Dip the vegetable strips in the tempura batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels. Repeat with remaining vegetables.

Prepare Dipping Sauce
In a small bowl, mix together soy sauce, mirin, and wasabi. Stir to combine.

Serve
Place the cold soba noodles on a plate or in a bowl. Arrange the tempura vegetables on the side. Sprinkle with chopped green onions and serve with the dipping sauce.
