Prepare the Udon Noodles

Cook the udon noodles according to package instructions. Once cooked, drain and rinse under cold water to cool. Set aside.

Make the Tempura Batter

In a bowl, mix all-purpose flour and ice water gently until just combined (do not overmix). The batter should be lumpy.

Prepare the Tempura Ingredients

Heat the vegetable oil in a deep frying pan over medium-high heat. Once hot, dip the shrimp and vegetable slices (sweet potato and zucchini) into the tempura batter and carefully place them in the hot oil.

Fry the Tempura

Fry the shrimp and vegetables until golden brown and crispy, about 2-3 minutes for shrimp and 3-4 minutes for vegetables. Remove them from the oil and place on paper towels to drain excess oil.

Prepare the Dipping Sauce

In a small saucepan, combine soy sauce, mirin, and dashi stock. Heat gently over low heat until warm.

Serve the Dish

Serve the cold udon noodles on a plate with the tempura arranged on top. Drizzle the dipping sauce over the noodles or serve it on the side. Garnish with sliced green onions and wasabi if desired.
