Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions, then mix with rice vinegar, sugar, and salt. Allow it to cool.

Prepare the Soft Shell Crabs
Dip the soft shell crabs in tempura batter, ensuring they are fully coated. Heat oil in a deep pan and fry the crabs until golden brown and crispy. Remove and drain on paper towels.

Roll the Uramaki
Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and spread a layer of sushi rice evenly over the nori, leaving about an inch at the top edge. Lay the fried soft shell crab, avocado, and cucumber in a line across the middle of the rice. Carefully lift the mat and roll the sushi tightly away from you, sealing the edge with a little water. Repeat with remaining ingredients.

Using a sharp knife, slice the rolled sushi into bite-sized pieces. Sprinkle with sesame seeds, and serve with wasabi and soy sauce on the side.
