1. Prepare the Hamachi
Using a sharp knife, slice the fresh hamachi into thin pieces (about 1/4 inch thick). Arrange the slices on a chilled plate.
2. Prepare the Condiments
In a small dish, serve soy sauce with a dollop of wasabi on the side. You can mix the wasabi into the soy sauce according to your taste.
3. Garnish
Add pickled ginger on the side of the hamachi sashimi and sprinkle chives on top for garnish.
