    In a small bowl, whisk together the matcha green tea powder with a few tablespoons of the milk to form a smooth paste. Set aside.

    Heat the Cream and Milk

    In a medium saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat over medium heat until the mixture is warm but not boiling, stirring frequently.

    Combine Mixtures

    Once the cream mixture is warm, add the matcha paste and stir until fully dissolved. Remove from heat.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually add a small amount of the warm cream mixture to the egg yolks, whisking continuously to temper the yolks.

    Combine and Cook

    Slowly pour the tempered egg yolks back into the saucepan with the cream mixture, stirring constantly. Cook over low heat, stirring frequently, until the mixture thickens slightly and coats the back of a spoon.

    Remove from heat, stir in the vanilla extract, and let the mixture cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight.
