Serves24

One of our favorite Passover treats, with a creamy texture and great vanilla flavor. It’s impossible to just eat one. By the way, they’re wheat free!

Directions

  1. 1

    Preheat the Oven

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

  2. 2

    Combine Ingredients

In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and a pinch of salt. Mix until everything is well combined.

  3. 3

    Whip Egg Whites

In a separate bowl, whip the egg whites until they form stiff peaks.

  4. 4

    Fold Mixtures Together

Gently fold the whipped egg whites into the coconut mixture until just combined, being careful not to deflate the egg whites.

  5. 5

    Shape Macaroons

Using a tablespoon or a cookie scoop, drop rounded mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

  6. 6

    Bake

Bake in the preheated oven for 20-25 minutes, or until the macaroons are golden brown on the edges.

  7. 7

    Cool and Serve

Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack. If desired, melt chocolate chips and drizzle over the cooled macaroons before serving.
