Really good whole catfish from Yazoo City, Mississippi, dusted in organic cornmeal then fried. Served with Anson Mill's grits and cheese, Southern-style bacon-braised greens, a side garnish of yellow mustard coleslaw, housemade tartar, and hot sauce.

Method

Fried Whole Catfish

    Prepare Catfish

    Rinse the whole catfish under cold water and pat dry with paper towels.

    In a bowl, combine cornmeal, salt, black pepper, and cayenne pepper. Dredge the catfish in the cornmeal mixture, ensuring it is fully coated.

    Heat Oil

    In a large skillet, heat vegetable oil over medium-high heat until hot.

    Fry Catfish

    Carefully place the catfish in the hot oil and fry for about 6-8 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Grits and Cheese

    In a saucepan, bring water to a boil. Add grits and salt, reduce heat to low and cook, stirring frequently, until thickened (about 20-25 minutes).

Bacon-Braised Greens
