Method
Root Beer

Prepare the Base
In a large pot, combine water, brown sugar, sassafras root, and wintergreen leaves. Bring to a boil and simmer for 30 minutes.

Strain and Cool
Remove from heat, strain out the solids, and let the mixture cool to room temperature.

Ferment
Add yeast to the cooled mixture, stir gently, and cover with a cloth. Let it sit in a warm place for 24-48 hours.

Bottle
Once fermentation is complete, bottle the root beer and refrigerate. Consume within a week.
LoCal Root Beer
