Prepare the Batter
In a large mixing bowl, combine the spelt flour, baking powder, and salt. In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter until well combined. Gradually pour the wet ingredients into the dry ingredients, stirring until just mixed. Do not overmix; a few lumps are okay.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2 minutes or until golden brown.

Serve
Serve the pancakes warm with your choice of toppings. Add fresh blueberries for an extra $2.50 if desired.
