Prepare the Ingredients
Peel and cube the sweet potatoes. Dice the carrots and chop the fire-roasted green chiles and dried apricots.

Cook the Sweet Potatoes
In a large pot, add the cubed sweet potatoes and cover with water. Bring to a boil and cook until tender, about 15 minutes.

Add Carrots and Chiles
Once the sweet potatoes are tender, add the diced carrots and chopped green chiles. Cook for an additional 10 minutes.

Incorporate Chipotle and Apricots
Stir in the minced chipotle pepper and chopped apricots. Pour in the orange juice and simmer for 5 minutes.

Final Touches
Remove from heat and stir in the chopped cilantro. Let it rest for a few minutes.

Serve warm, garnished with toasted pine nuts on top.
